Why Not Kung Hei (Hey) Fat Choi?

Most of the ethnic Chinese growing up in Hawaii since the 1920's can trace their roots to Canton, China. Hence, the Cantonese Pinyin is "Kung Hei Fat Choi." Canton is the English name for Guangzhou province. Cantonese was considered as a prestige dialect of Chinese. However, in China's efforts to unite the country under one language, Mandarin was named as the proper dialect.
